About Mt Fuji Hibachi & Sushi

Let me introduce you to Mt Fuji Hibachi & Sushi, a lively teppanyaki-style spot tucked into 18260 Lincoln Ave STE101, Parker, CO 80134, United States, and honestly, it’s one of those places that instantly feels like a go-to. From the moment you walk in, the energy hits just right, with the open hibachi grills setting the stage for dinner that’s as entertaining as it is satisfying. Mt Fuji Hibachi & Sushi is all about that classic teppanyaki restaurant vibe, where chefs cook right in front of you, flipping, sizzling, and turning every meal into a shared experience. At the same time, the sushi side of the menu keeps things balanced, offering fresh, carefully prepared rolls that work just as well for a quick lunch as they do for a relaxed night out. What I really like is how flexible the experience feels, because you can choose to dine in and soak up the atmosphere, grab takeaway when you’re short on time, or go with delivery or no-contact delivery when staying in sounds better. The menu leans comfortably into crowd-pleasers, mixing comfort food with lighter, healthier options, so everyone at the table finds something that clicks. Small plates make it easy to sample a bit of everything, especially if you’re sharing, and the happy-hour food and drinks add an extra reason to stop by after work. The drink selection keeps things easygoing and social, with beer, cocktails, wine, and spirits all fitting naturally into the experience. Whether you’re planning a casual dinner with friends, a low-key date night, or just want a dependable spot that delivers flavor and fun without feeling overdone, Mt Fuji Hibachi & Sushi fits smoothly into the local dining scene while still feeling like a little escape. It’s the kind of neighborhood restaurant that works for celebrations or simple weeknight dinners, blending familiar flavors with a welcoming setup that makes newcomers feel comfortable while regulars keep coming back for the show and consistency.

Excellent seafood and atmosphere. The 24.99 All You Can Eat lunch special is a great deal if you enjoy good sushi. Best I’ve had since moving to Colorado from Japan!

Came for lunch after seeing they started doing an all you can eat lunch special. Price was very reasonable, ~$25/person and menu had great options without being overwhelming. Quality was really good and the same as when we’ve come for dinner. As always, service was kind, courteous, and attentive. Definitely one of the best sushi options in Parker and excited they have an all you can eat option now.

Dining here was an enjoyable experience that blended great flavors with entertaining presentation. The meal began with a light soup and fresh salad, both simple but a good start to the evening. The main highlight was, of course, the hibachi grill. The chef prepared everything right in front of us with skill and humor, creating an engaging atmosphere for the whole table. The steak, chicken, and shrimp were cooked to order and seasoned well, with a nice balance of savory flavors. Vegetables were fresh and slightly crisp, complementing the fried rice and noodles. Portions were generous, making it easy to share or take leftovers home.

Our server was Jason (with a Y) and he was really funny. Great food and the portions were plenty to take home. We had steak, chicken, salmon, scallops, and shrimp. All around solid guy who not only made jokes, but laughed at my parent’s bad one’s 10/10 recommend and ASK FOR JASON (with a Y).

Update: spoke with Owner/manager, very understanding and accommodating. Appreciate the interest in customer feedback and will absolutely give it another shot. A great hibachi chef undermined by a rushed and disappointing dining experience. My party was seated promptly, and our hibachi chef was fantastic, providing excellent service and a fantastic show. The food was good, particularly the seafood, though it could have benefited from a bit more seasoning. Unfortunately, the experience was completely derailed by the speed at which the entire meal was rushed. For a hibachi dinner where we expected a dining experience, being turned around in just 32 minutes was incredibly disappointing. The rush started early and never let up: Salad served with soup a minute later. Immediately after our hibachi dinner was served, my daughter received her birthday dessert complementary, nice touch but it was ice cream, even though she had only taken a couple of bites of her main course. After the "Happy Birthday" song and the dessert service were completed, our server brought the check, stating "no rush." Less than three minutes later, she returned with to-go boxes while we still had full drinks and barely-touched dinner plates. Just five minutes after that, she again asked to take the check, causing me to question the earlier "no rush" comment. Spending $30–$50 per person on a hibachi experience comes with the expectation of enjoying the meal and the show. Instead, we felt pressured and rushed from start to finish. Because the service experience was so poor, despite the fantastic chef, I do not believe we will be returning. However some people may appreciate the speed, I do at times but it’s $12 burrito not a pricey birthday celebration with my family.
